SAFE FROM SOURCE TO TABLE: BODRUM PİONEERS MUNİCİPAL HACCP FOOD PROGRAMNME

Bodrum Municipality has introduced a pioneering food safety model through its municipal enterprise, Bodrum Belediye Inc. (Cafes & Restaurants – Bodrum Belediyesi Gıda AŞ), by implementing the internationally recognized HACCP (Hazard Analysis and Critical Control Points) system across its food production operations.


Applied especially in restaurants, cafés and the municipality’s in-house production facility, the HACCP system ensures high standards of hygiene, traceability and cold chain management throughout every stage of food preparation. The initiative directly affects the quality and safety of meals served at municipal establishments and sold at the Bitez retail outlet.

Commonly used in global food production, HACCP proactively identifies and controls potential hazards before they occur, significantly minimizing health risks and ensuring consumer safety. The system also helps reduce food waste, boost efficiency and lower the likelihood of product recalls.

Currently, products such as hamburger patties, meatballs and traditional Turkish “kalem böreği” are produced under these rigorous safety standards. Officials emphasize that HACCP is not merely a certification process but a long-term transformation in institutional culture and sustainability.

Described by experts as a model of responsible local governance, the Bodrum HACCP initiative highlights how municipalities can play a proactive role in public health by implementing systematic, preventive food safety practices.
